Lutong Pinoy: Stuffed Eggplant Recipe - Learn Traditional Filipino Cooking

This week, you will learn how to make:

STUFFED EGGPLANT

4 small eggplants
1/2 cup ground pork
1/4 cup ground beef
1/2 cup sliced onion
1/2 cup sliced tomatoes
2 eggs
Cooking oil
Bread crumbs
Salt and pepper to taste

Roast or broil eggplants and peel. Saute onion in 1 tablespoon oil and tomatoes. When cooked, add ground meats. Cook covered about 15 minutes, stirring now and then. Season to taste. Divide into four portions and fill each broiled eggplant with one portion. Dust with bread crumbs and coat each with beaten egg. Fry in hot oil.
